This recipe for homemade Twix Bars is a game changer! When you take a bite, you won’t believe that this candy bar copycat is gluten-free, refined sugar free, Paleo, and vegan. Happy Fri-YAY!!! It’s the weekend, and you deserve some celebratory chocolate for making it through the week. And today, we’re celebrating with HEALTHY(er) homemade Twix Bars.

Whaaaat? Healthy Twix? I know. Yes, this is for real. I made homemade Twix bars that you can eat guilt-free, because these pretty little bars are gluten-free, grain-free, refined sugar-free, AND vegan. A whole big pile of them, because you deserve nothing less. I had to make this recipe three times, because you know, testing and stuff. I also needed an excuse to eat more.more.more of these delicious goodies.

Now, let’s talk about how this homemade candy magic happens. The crust is made with coconut flour, which creates a cookie base that creates a texture most similar to shortbread of any gluten-free flour I’ve tried.

Unfortunately, because coconut flour is super absorbent and likes to be unique, no other flour would substitute well here. A little goes a long way with coconut flour though, so pick up a bag and you’ll have it around for a while (and you can make lots of Twix!).

The caramel filling is seriously super easy. It can be made in the microwave or on the stove, but you don’t even need to cook it; all of the ingredients just need to be melted together and fully combined before being poured over the cooled crust and left to set. While the caramel cools, coconut oil, cocoa powder, and maple syrup come together for the quickest homemade chocolate ever. Pour the chocolate over the caramel and leave it to set and we’re almost done!

I opted to sprinkle a bit of fleur de sel over the top before the chocolate set, too. I’m a believer that a sprinkle of flaky sea salt makes pretty much anything better and I loved the bite of crunchy salt on these homemade Twix bars. It’s the perfect complement to the sweet filling, but you can leave it off for a more classic flavor.

I seriously couldn’t get over these homemade Twix bars and I immediately regretted sending them all off to work with my roommate and not saving any for myself! I think another batch may be in order soon 😃

INGREDIENTS :

For the shortbread crust :

  • ⅔ cup coconut flour
  • ¼ teaspoon kosher salt
  • 3 tablespoons pure maple syrup
  • ⅓ cup coconut oil, solid

For the caramel filling :

  • ½ cup creamy almond butter
  • ⅓ cup pure maple syrup
  • ⅓ cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • ¼ teaspoon kosher salt

For the chocolate topping :

  • ¼ cup coconut oil, melted
  • ¼ cup cocoa powder
  • 2 tablespoons maple syrup
  • ½ teaspoon flaky sea salt

INSTRUCTIONS :

  1. Preheat the oven to 350ºF. Grease a 14×5” tart pan or 8×8” square pan with coconut oil (I recommend lining the pan with parchment paper as well if your pan doesn’t have a removable bottom).
  2. Combine coconut flour and salt in a bowl.
  3. Add the maple syrup and stir until fully combined and crumbly.
  4. Add the room temperature coconut oil and mix until a large dough ball forms, pressing out any clumps of coconut oil.
  5. I used my hands at the end to bring the dough fully together.
  6. Press the dough into the prepared pan. Bake for 9-11 minutes, or until golden brown around the edges.
  7. Let cool completely.
  8. For the filling, combine all of the ingredients in a small saucepan and heat until all of the ingredients are melted and throughly combined.
  9. Pour over the crust and let cool in the refrigerator until set before topping with chocolate layer.
  10. For the chocolate topping, whisk together all of the ingredients and pour over the cooled caramel layer.
  11. Smooth evenly and sprinkle with flaky sea salt.
  12. Let cool until set.
  13. Slice into 1-inch slices, or 16 squares.
  14. Keep stored in the refrigerator.

These super simple Apple Pie Fries make for a super fun spin on a traditional apple pie. Store bought pie crust cut into strips, filled with a simple store bought apple pie filling, then baked for crispiness. You can dip them in caramel sauce or even whipped cream for additional yumminess.

This weekend, I decided to use the other store bought pie crusts and store bought pie filling I had on hand to surprise the kiddos with these super fun Apple Pie Fries.

These cute little snacks are so easy to make and perfect for dipping. You can make Homemade Pie Crust and Homemade Apple Pie Filling.  I was looking to make a quick and easy dessert so I used store bought ingredients so I could make these in a jiffy.

INGREDIENTS :

  • 1 package Refrigerated Pie Crust (2 crusts)
  • 10 oz Apple Pie Filling
  • 1 Egg
  • 1 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 1/4 cup Sugar
  • Sparkling Sugar
  • Caramel Topping for dipping

INSTRUCTIONS :

  1. Preheat the oven to 350.
  2. Spray cookie sheet with non stick spray or use silicone mat and set aside.
  3. Allow crusts to warm slightly to make them easier to work with.
  4. Dust work area with flour and slightly roll out crusts.
  5. Pulse in food processor a couple of time or use a knife to chop pie filling into smaller pieces.
  6. Spread apples over top of 1 crust leaving about 1/8″ uncovered at edges.
  7. Place other crust on top.
  8. Cut into 1/2″ strips and then cut to fry sized lengths.
  9. Beat egg in bowl until well blended.
  10. Mix together sugar, cinnamon and nutmeg.
  11. Brush tops with egg wash and sprinkle lightly with sugar mixture.

Boy, oh boy do I have a delicious recipe for you today! I don’t usually bake with my brown bananas because I freeze them to use in smoothies, but this time, I decided to make cake — chocolate cake! This even errs on the side of healthy, plus, it’s so incredibly moist, you don’t need frosting!

So, how is this cake healthy? I said, “it errs on the healthy side.” As in there is no oil, and applesauce helps sweeten it with only 3/4 cup of brown sugar. So it’s more like a lightened up recipe. It’s still a treat. Let’s keep it real here. 😉

Why no frosting? There are semi-sweet chocolate chips on the inside and mini semi-sweet chocolate chips on the outside. When you eat it warm, it’s the best melty-chocolate experience.
Why should I make this? Banana bread is boring, and chocolate makes everything better! Plus, doesn’t it look so yummy? This cake tastes as good as it looks!

INGREDIENTS :

  • 3 medium ripe bananas
  • ¾ cup brown sugar
  • ½ cup applesauce
  • 1 tsp vanilla
  • 1 large egg
  • 1 cup flour

  • ½ tsp salt
  • 1 cup semi sweet chocolate chips
  • 2 Tbsp mini chocolate chips for topping – optional

INSTRUCTIONS :

  1. In a stand mixer with the paddle attachment, mix the bananas and brown sugar until the bananas are mashed and the sugar is dissolved.
  2. Add the applesauce, vanilla, and egg. Mix together.
  3. In a separate bowl, mix together the flour, cocoa powder, baking soda and salt.
  4. Add the dry ingredients to the wet ingredients and mix until incorporated.
  5. Fold in the semi-sweet chocolate chips.
  6. Pour batter into a greased 8×8-inch baking dish.
  7. Sprinkle the top with mini chocolate chips.
  8. Bake at 350 degrees Fahrenheit for 25 to 35 minutes.
  9. Check the center with a toothpick to determine doneness.
  10. Best eaten warm.

The Best Chocolate Cake

  • 2 cups all-purpose flour
  • 1 cup light brown sugar
  • 1 cup granulated sugar

  • 1 teaspoon salt
  • 1 cup milk
  • ½ cup canola oill
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup strong hot coffee

Chocolate Buttercream Frosting

  • 1 cup (2 sticks) unsalted butter, softened
  • ¾ cup unsweetened cocoa powder
  • 3 ½ – 4 cups confectioners sugar
  • 2-4 tablespoons milk, as needed
  • 1 teaspoon vanilla extract

INSTRUCTIONS :

The Best Chocolate Cake :

  • Preheat oven to 350 degrees.
  • Butter & flour two 9 inch round cake pans.
  • In a large bowl combine flour, both sugars, cocoa, baking powder, baking soda and salt.
  • Set aside. With a stand mixer with the paddle attachment, add in milk, oil, eggs and vanilla until combined.
  • Slowly add the dry ingredients to the wet ingredients with the mixer on low.
  • Pour in the hot coffee (Batter will be thin)
  • Divide between the prepared pans and bake for 23-25 minutes or until a toothpick inserted in the center comes out clean.
  • Cool the cake completely before frosting.
  • Store at room temperature in an airtight container for up to 3 days!

Chocolate Buttercream Frosting :

  • Add butter to a stand mixer with the whisk attachment. Beat until fluffy.

Who doesn’t love an Oreo? Well, they’re even better in this classic Oreo Icebox Dessert, with layers of Oreos, pudding, and whipped cream. Yum!

I have been craaaaaaving this Oreo icebox dessert for about a month now, ever since our end-of-school ice cream party when my ‘room mom’ brought in Oreos for the students to put on their ice cream. (Yes, I’m highly suggestable … advertising works very well on me … especially when there’s chocolate involved.)

I went right out that afternoon and bought a package of Oreos so I could whip up this dessert. But can you believe I didn’t actually make it until this weekend? Let me tell you, my friends, that’s showing some serious restraint for me! It’s sad to say, willpower is not one of my key strengths.

But alas, I succombed to the call of the Oreo.

I love Oreos. Don’t we all? Well, as much as I love them, I think I love them even more when they’re surrounded by layers of pudding and whipped cream. Like in this no-bake icebox dessert.

It looks innocent enough, right? Just some whipped cream with a sprinkling of crushed Oreos? Ah, but then you cut in and reveal the delicious and devilish layers lurking inside! Creamy goodness. I love creamy goodness.

INGREDIENTS :

  • 1 (15 oz.) package Oreos, crushed
  • 6 T. butter, melted
  • 1 (8 oz.) package cream cheese, softened*
  • 1 c. confectioners’ sugar
  • 1 large (5.1 oz.) box instant chocolate pudding* + milk to prepare, as specified on the pudding package
  • 1 large (16 oz.) container Cool Whip whipped topping*

INSTRUCTIONS :

  1. Set aside about 1/4 cup crushed Oreos. Mix remaining crushed Oreos with the melted butter.
  2. Press into the bottom of a 9×13″ pan.
  3. Combine cream cheese and confectioners’ sugar; mix well.
  4. Fold in 1/2 of the Cool Whip until well combined. Spread the cream cheese mixture over the crushed Oreo layer. Chill for 20 minutes.
  5. Prepare chocolate pudding according to package directions.
  6. Spread over cream cheese layer. Chill for 20 minutes.
  7. Spread remaining Cool Whip over the pudding layer.
  8. Sprinkle reserved crushed Oreos on top.
  9. Chill for 8 hours or overnight before serving.
  • *NOTE:  I use 1/3-less-fat Neufchatel cream cheese, sugar-free instant pudding (the ounces on the package will be less), and lite Cool Whip. And it still tastes delicious! ENJOY !

Caramel Apple Slices are a delicious twist on a fall classic that are easier to eat & enjoy at parties or just for fun!

It’s caramel apple season again!! Woohoo!!!

While I love caramel apples, I must admit I always have to eat them with a knife on hand because I can never seem to be able to just take bites out of them. Super frustrating…

And while Mini Caramel Apples are really cute (& I even revisited my Mini Caramel Apples recipe in a new post with new tips & tricks), I just don’t have the time or patience to deal with gravity & those little weeping apple balls of caramel mess. And I know you don’t either!

But I still desire to eat my caramel apples with ease & enjoyment.

I was inspired by a picture of a sprinkle & chocolate covered apple slice, but when I clicked through it showed a candy apple recipe & the above described picture was no where to be found. I didn’t even bother looking at the recipe, I was pretty upset by the deception.

So I decided to fix the situation by doing some caramel apple testing & I was determined to come up with a solution with a little trial & error.

The chocolate hardened within a few minutes, but the butterscotch took about 10-15 minutes to harden. I decided to let them sit for an extra hour because I wanted to see if they would weep through & cause the coating to fall off, before I proceeded with the caramel. Plus I needed to run to the store to buy peanuts, sprinkles, & a few other things.

When I got home I noticed a few tiny drops of apple tears from the chocolate dipped apple slices, no big deal. But the butterscotch covered apple slices seemed to be weeping quite a bit more.

I wiped up all the liquid, set to the side the apple slices that were too weepy & falling apart, & proceeded to the caramel step. And that’s when I realized my original plan was not going to work. The first one was my fault, I poured hot caramel on top of my chocolate apple… Majorly bad idea! Seriously, what was I thinking??

So then I popped my apple slices in the freezer for 5 minutes & I let my caramel cool & thicken. I then tried again with the same results. And you can see in the picture above what I did next. It might not look pretty, but it was delicious!

INGREDIENTS :

  • Apples
  • White or Wooden Lollipop Sticks
  • Melting Chocolate
  • Caramel
  • Topping-otional

INSTRUCTIONS :

  1. First wash & slice your apples, remove the seeds, insert the stick at the bottom, & pat the apple slices dry.
  2. Cover each apple slice in melted chocolate & place on a piece of wax paper to dry.
  3. Continue this process until all of your apples are covered in chocolate & have hardened.
  4. Then drizzle the caramel & other toppings on top of your apple slices.
  5. Let harden & enjoy!
  • Notes :

1. You could alternatively use butterscotch on your thicker slices of apples, but you should be aware that butterscotch does not harden as well as the chocolate & could result in weeping apples & the butterscotch falling off.
2. These Sliced Caramel Apples can be made the day before & left in your fridge on wax paper until you need them the next day. Just don’t forget to note the 5 tips mentioned in my recipe post.

  • More Tips :

1. Cut thick apple slices so the stick stays secure. Approximately 1/2 – 3/4 inch thick works great.
2. Make sure to pat down the apples to soak up any extra apple juice.
3. Allow some of the chocolate to drip onto the stick, this will act as a sort of edible glue that holds the stick & apple together.
4. Use slightly cooled caramel so the chocolate doesn’t melt off.
5. I also recommend that you make them & eat them in the same day. The longer they sit the greater chance for a weeping caramel apple slice, which will cause the yummy coating to break or slide off in some areas.

Years ago when the hubby and I first started dating (OMG that was 21 years ago), we would dine at Chi-Chi’s quite often. One of my favorite items to order for dessert was their super tasty fried ice cream. The stuff was like heaven.

Ice cream wrapped in a crispy cinnamon flavored coating was just so unheard of back in those days. A few years ago, I was reminiscing with the hubby and we chatted about making fried ice cream at home. We never got around to it for some reason. I guess we just had forgotten about attempting to make our own. I have noticed quite a few recipes around Pinterest for no frying involved ice cream and decided maybe we could give it a try.

The idea of less mess and not having to freeze ice cream so cold and do so many crazy steps that it would take to make fried ice cream sounded super awesome.

Very few ingredients are needed to make your own No Fry Fried Ice Cream. You will need ice cream (we used vanilla), Corn Flakes cereal, sugar, cinnamon, and butter. These little tasty desserts can be made in just a few minutes time. Perfect!

INGREDIENTS :

  • 5 cup Corn Flakes
  • 1/2 cup Butter
  • 2 tsp Cinnamon
  • 4 tsp Sugar
  • Vanilla Ice Cream

INSTRUCTIONS :

  1. Scoop and form Ice cream into approx 2 1/2″ balls
  2. Place in freezer for 15 minutes.
  3. Pulse corn flakes in food processor to crush.
  4. Melt butter in a medium skillet over medium heat.
  5. Stir in crushed corn flakes and cinnamon and cook, stirring constantly, about 3-5 minutes or until golden brown.
  6. Remove from heat and stir sugar into mmixture.
  7. Pour into a shallow dish and allow to cool.
  8. Place ice cream ball into mixture and roll to evenly coat.
  9. Press corn flake mixture around outer surface if a thicker coating is desired.
  10. Serve topped with chocolate syrum, whipped topping and/or cherries, as desired.

This recipe is why I have so much trouble eating healthy. Lord help me, these Hot Fudge Cheesecake Brownies are a chocoholics dream!

Last weekend I attended my 20 year High School Reunion. (Just typing that makes me feel really, really old, BTW.)

It was fun to go and see some of my friends I haven’t seen in over 10 years. We had dinner with my oldest friend and her husband, which was nice. We hardly ever get to see them but it’s the kind of relationship that you just fall back into, even after a year of not talking.

I don’t know what I was expecting, but really the reunion was just like high school except everyone was older, overdressed for the bar it was held in, and alcohol was served. (Although that last one happened often in high school, if I’m being totally honest…) I hung out with my handful of friends, watched the popular crowd make the rounds, not knowing who I was. Really, in 20 years, nothing changed except the women dye their hair and look pretty much the same and the men are mostly bald.

The hard part about the reunion for me came after it was over. I got a little melancholy thinking about all the friendships I had back then and where they are today. I really did not enjoy high school; my main memories of it are torturous. But my friends were my lifeline, my existence, my soul. And it’s kind of sad to see that, in most cases, neither side thought to keep them in tact. Really lets you know that all teenage angst and drama really doesn’t translate to the “real” world.

As an adult, it’s very hard for me to retain good friendships. I’m an introvert at heart and a homebody and Mel and I pretty much keep to ourselves. I’m horrible keeping up with the mom friends down the street, let alone people who live hours away that I knew 20 years ago.

The one batch of friends these days that’s easiest to keep up with? The ladies I’ve met through blogging. I value all of my friendships, but the blogging ones are sometimes the easiest. We live similar lives, chained to our computers and iPhones and kitchens, living this frantic owning-your-own-business existence. Plus, we’re on social media 24/7, so at any time of day I’m in the middle of 3 Facebook messenger conversations that turn into 3-day long chat sessions.

These “blogging” friendships make me especially happy when one of us has exciting things happening: new homes, new loves, new babies, new cookbooks. Which leads me to this recipe today: Hot Fudge Cheesecake Brownies.

FOR THE BROWNIES:

  • 1 cup unsalted butter
  • 1 1/4 cups semisweet chocolate chips (or milk chocolate)
  • 3/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1 1/4 cups all purpose flour
  • 1 1/2 cups mini chocolate chips or additional chocolate chips (or chopped peanut butter cups), for topping

FOR THE CHEESECAKE:

  • 8 ounces cream cheese, softened
  • 1 jar (about 12-16 ounces) hot fudge topping

INSTRUCTIONS :

  1. Preheat oven to 350°F. Line a 9×13″ pan with foil and spray with nonstick cooking spray.
  2. Make the brownies: Place the butter and 1 1/4 cups chocolate chips in a large microwave safe mixing bowl and heat on high power in 30-second increments, stirring between each, until melted and smooth.
  3. Stir in cocoa powder until completely incorporated. Add both sugars, vanilla, and salt, stirring to combine.
  4. Stir in eggs, one at a time, until completely mixed through.
  5. Gently stir in flour until incorporated and no more flour is visible. The batter will be thick.
  6. Spread 2/3 of the brownie batter in the prepared pan and set the rest aside.

One snack that is pretty much ALWAYS in our house is OREO cookies.  My husband, son and I tend to go to these cookies whenever we have a hankering for a crunchy snack or a sweet treat.  I love using OREO’s in desserts, like my Chocolate Peanut Butter Mousse Bars, my Red Velvet OREO Poke Cake and my Lemon OREO Icebox Pie.  Just like the rest of these desserts, my OREO Lovers No Bake Cheesecake Bars are a wonderfully simple, and completely delicious dessert for just about any occasion!

I started this dessert with a simple OREO crust.  You can use regular or double-stuffed OREOS, as both make a fantastic crust.  With my food processor, I crushed about 25 cookies, and then added melted butter.  From here I pressed this OREO-butter mixture into the bottom of a 9×9″ plan that I lined with aluminum foil.  This is totally optional, but a good way to easily lift out the bars and cut into squares.  You can do without the foil, and simply spray your 9×9″ pan with non-stick spray.

INGREDIENTS :

  • 25 OREO cookies (regular or double-stuffed), crushed
  • 5 Tbsp. butter, melted
  • 16 oz. (2 – 8 oz. blocks) cream cheese, room temperature
  • 1 c. powdered sugar
  • 1 tsp. vanilla
  • 1 (8 oz.) container, frozen whipped topping, thawed
  • 1 c. broken OREO pieces (about 10 cookies)
    Topping:
  • 1½ c. semi-sweet chocolate chips
  • ½ c. heavy whipping cream
  • 8 OREO’s, sliced in half

INSTRUCTIONS :

  1. Line a 9×9″ square pan with aluminum foil.
  2. Crush the 25 OREO cookies in a food processor.
  3. Add the melted butter, and pulse in the processor a few more times to combine.
  4. Pour the crumb mixture into the lined pan, and press firmly to the bottom of the pan. Set aside.
  5. With a hand or stand mixer, cream together the cream cheese and powdered sugar and mix until creamy and slightly fluffy.
  6. Add the vanilla and mix. Gradually add in the thawed whipped topping. Fold in the broken OREO cookie pieces, and mix together.
  7. Spread the mixture evenly over the top of the crust, making sure to spread firmly and evenly into corners of the pan.
  8. Refrigerate for at least 1-2 hours, or until firmly set.
“NOTES”
If you would prefer a more firm, crisp crust, bake the OREO cookie crust at 350 for 10 minutes. Let cool completely before adding the cheesecake filling. (Yes, I realize this makes the dessert no longer “no-bake”, however, a more firm crust will yield more uniform, square slices. Just an option. 🙂

INGREDIENTS :

  • 2 cups all-purpose flour
  • 3 tsp cornstarch
  • 1 tsp baking soda
  • 1 tsp sea salt, plus more for sprinkling
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 2 eggs, at room temperature
  • 1 cup butter, at room temperature
  • 2 tsp vanilla
  • ¾ cup unsweetened cocoa powder
  • 24 tablespoons Nutella, chilled
  • 1 cup semisweet chocolate chips, plus more for topping

INSTRUCTIONS :

  1. Scoop out 24 tablespoons of Nutella onto a sheet of parchment paper or silicon mat.
  2. Then freeze them for 1 hour or until solid.
  3. Whisk together flour, cornstarch, baking soda and salt in a medium bowl and set aside.
  4. In a separate large bowl whip up the butter until soft and fluffy, about 2 minutes.
  5. Add both sugars and whisk together for another few minutes.
  6. Mix in the eggs and vanilla until incorporated and gradually add cocoa powder.
  7. Add the flour mixture and chocolate chips to the bowl. Mix until everything is combined.
  8. Scoop about ¼ cup of the dough mixture at a time and using your hands roll the ball.
  9. Place the ball onto a baking sheet covered with parchment paper or silicon mat and repeat to make 24 equal dough balls.
  10. Using the back of a spatula make holes in the centre of the dough balls and place Nutella frozen scoops in the middle.
