Cheesecake is a New Year’s family tradition. As is my grandmother always knocking over a huge thing of soda. Or pop. Or whatever you call it. I grew up in northern Indiana and always said “pop,” but I’ve lived in various south and southwest states for over a decade and my vernacular has changed to “soda.”

I can’t say our New Year’s Eve is ever really rock’in but it’s fun to us nonetheless. As a kid it was always at grandma’s house with pizza, cherry 7Up, and the aforementioned cheesecake. As a so-called grown responsible adult our NYE depends on whether or not the hubs has to get up for work the next morning (at 4 a.m. poor guy). On the years he doesn’t work we go all crazy and drink chocolate milk til we’re silly.

I promise we’re not nearly as lame as I make us sound!  Despite meeting in a bar (totally unoriginal), we never think to drink.  It’s not in the house and my grocery bill is high enough that I never want to add to it.  So I over-indulge in things like chocolate milk and crazy awesome sour cream cheesecake.  It has the most amazing texture and depth of flavor.  Think New York style cheesecake but better.  Yet so simple to make!

INGREDIENTS :

  • Chex crust or GF cookie crust prepared in 9-inch spring form pan (If not doing the Chex crust I recommend
  • 1½ cups GF shortbread cookie crumbs plus 2-3 tbsp butter for a wonderful crust)
  • 3 8-ounce packages of cream cheese, softened
  • 14-ounce can sweetened condensed milk
  • 4 large eggs
  • 8-ounces sour cream
  • 1 tablespoon vanilla extract

INSTRUCTIONS :

  1. Preheat oven to 350 degrees; place pan of water on lowest rack in oven – this helps prevent the cheesecake from cracking during baking.
  2. In large mixing bowl beat cream cheese until fluffy.
  3. Gradually beat in sweetened condensed milk until smooth.
  4. Beat in eggs, one at a time, then sour cream and vanilla.
  5. Pour into 9-inch spring form pan.
  6. Bake 50-55 minutes until edges are light golden brown.
  7. The center will still be very slightly soft.
  8. Let cool, then refrigerate at least 4 hours to chill completely before serving.

Flour-less monster cookie bars are the perfect back-to-school snack! They freeze really well and who can resist these bars loaded with oatmeal, peanut butter, chocolate chips, and m&m’s?!

Are you ready for back-to-school? This is my first year sending a child to “real school”, like at an elementary school where he is there all day and rides the bus. I’m so nervous but yet so excited. I know he will love it.

With back-to-school comes the dreaded, “I’m starving mom!” the second they walk in the door. I remember doing that growing up, so I am sure my sweet little kindergartner will do the same thing. These (no flour!) monster cookie bars are so delicious and perfect for an after school snack to fill their little bellies after a long day.

The recipe makes an entire cookie sheet, so I always freeze some and pull them out when needed. I just put a couple in a Ziploc bag and freeze them that way. They only have to sit out for several minutes to thaw a bit or you could microwave for 20 seconds or so.

I mean, seriously!? WHO can resist that? I am a sucker for all things ‘monster cookie’. The combo of peanut butter, oats, and those cute mini rainbow m&m’s just can’t be beat.

I will note that this recipe calls for both quick oats and old-fashioned (regular) oats. You could use all quick, but I have found that using all quick oats results in a tough/dense cookie bar. Splitting the oats results in a soft and delicious cookie bar. Another tip is to use a pizza cutter to cut these into squares. I do that every time and it’s so easy!

INGREDIENTS :

  • 1 cup packed brown sugar
  • 1 cup granulated sugar
  • 1/2 cup (1 stick) salted butter, softened
  • 1 1/2 cups creamy peanut butter
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1 1/2 cups quick oats
  • 3 cups old-fashioned oats
  • 1 teaspoon baking soda
  • 1-2 cups mini m&m’s
  • 1 cup mini chocolate chips

INSTRUCTIONS :

  1. Heat oven to 350 degrees. Prepare a cookie sheet by lining it with parchment paper.
  2. In large bowl, combine brown sugar, granulated sugar, peanut butter, and butter.
  3. With a hand-held blender, mix until pale in color and combined.
  4. Add the eggs and vanilla extract. Blend together.
  5. Add in the oats and baking soda.
  6. With a rubber spatula or wooden spoon, mix by hand until combined.
  7. Add in the m&m’s and chocolate chips (reserve some for top of bars if wanted).
  8. Stir together well until combined.
  9. Dump onto your parchment lined cookie sheet and spread out.
  10. This will take several minutes, but it can be done.
  11. Sprinkle the reserved m&m’s and chocolate chips on top (if wanted).
  12. Press down slightly into dough.
  13. Bake for 18-20 minutes. The edges will be lightly browned and the middle will still look pale and underdone, but it will finish baking as it cools.
  14. Let cool for at least an hour so the bars can firm up and come together.
  15. You do not want to over-bake these!

These super simple Apple Pie Fries make for a super fun spin on a traditional apple pie. Store bought pie crust cut into strips, filled with a simple store bought apple pie filling, then baked for crispiness. You can dip them in caramel sauce or even whipped cream for additional yumminess.

I shared out Caramel Apple Pie Cookies with you last week. They were so simple and my whole family really thought they were quite tasty. This weekend, I decided to use the other store bought pie crusts and store bought pie filling I had on hand to surprise the kiddos with these super fun Apple Pie Fries.

These cute little snacks are so easy to make and perfect for dipping. You can make Homemade Pie Crust and Homemade Apple Pie Filling.  I was looking to make a quick and easy dessert so I used store bought ingredients so I could make these in a jiffy.

INGREDIENTS :

  • 1 package Refrigerated Pie Crust (2 crusts)
  • 10 oz Apple Pie Filling
  • 1 Egg
  • 1 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 1/4 cup Sugar
  • Sparkling Sugar
  • Caramel Topping for dipping

INSTRUCTIONS :

  1. Preheat the oven to 350.
  2. Spray cookie sheet with non stick spray or use silicone mat and set aside.
  3. Allow crusts to warm slightly to make them easier to work with.
  4. Dust work area with flour and slightly roll out crusts.
  5. Pulse in food processor a couple of time or use a knife to chop pie filling into smaller pieces.
  6. Spread apples over top of 1 crust leaving about 1/8″ uncovered at edges.
  7. Place other crust on top.
  8. Cut into 1/2″ strips and then cut to fry sized lengths.
  9. Beat egg in bowl until well blended.
  10. Mix together sugar, cinnamon and nutmeg.
  11. Brush tops with egg wash and sprinkle lightly with sugar mixture.

So I’m a cream-with-my-coffee kinda girl. Always have been, always will be.
It’s to the point where I actually carry mini coffee creamers with me when I travel. What? I love my coffee creamer! I dare Wayne Brady from Let’s Make A Deal to make a game out of what’s in my purse.

I would so own him with my thimbles, spare change, hand sanitizer and coffee creamer. (Okay, maybe not a thimble… but if I ever went on the show, you bet your booty I’d be stocking up on thimbles).
So this pie is totally my bag. Not literally of course, but figuratively. Rather: this pie is my jam. No wait. This pie is my life? That’s more like it.

It’s so unapologetically creamy and dreamy and brimming with amazing coffee flavor. It tastes like a latte almost, with that slight milky undertone with that warm, aromatic coffee flavor. And of course, there’s a chocolate crust because chocolate + coffee = BFFs. Like the Rachel and Ryan of the food world (and yes, I’m still holding out for Ryan Gosling and Rachel McAdams to rekindle their love. I’LL WAIT FOREVER FOR YOU, RYRA.)

Making this pie is a cinch. Just whisk together some cold brew coffee, a little milk and some instant pudding mix into a bowl until it’s nice and thick. I also added in some Nielsen-Massey Pure Coffee Extract because I really wanted to drive home the coffee flavor.

This extract is a total must-have if you want a delicious coffee flavor in your baked goods, and it really ramps up the flavor here.
Once the mixture is good and thick, fold in some Cool Whip. I know, some of you detest the stuff but man, there’s no substitute for it. It’s more stable than whipped cream so I like it for no-bake pies like this. Once it’s good and combined, pour it into the prepared Oreo pie crust.

Once it’s sufficiently chilled, it’s time for EATING, Y’ALL. Pipe on some whipped cream if ya fancy, and add some dark chocolate-coated espresso beans for a fancy schmancy garnish. Voila!

INGREDIENTS :

  • 1 (3.4 oz) box INSTANT vanilla pudding mix
  • ¾ cup cold brew coffee (any brand is fine, but please make sure it’s sweetened. I used Starbucks)
  • ½ cup milk or cream
  • 1 Tbsp pure coffee extract (or less if you want a less strong coffee flavor)
  • 1 (8 oz) tub Cool Whip, thawed
  • 1 prepared Oreo cookie crust
  • Whipped cream, for garnish
  • Dark chocolate-covered espresso beans, for garnish

INSTRUCTIONS :

  1. In a large bowl, whisk together the instant pudding dry mix, the cold brew coffee, the milk and the coffee extract.
  2. Whisk until combined and slightly thickened, about 1 minute.
  3. Fold in the Cool Whip completely, making sure to get the bottom!
  4. Pour the mixture into the prepared pie crust and smooth out the top.
  5. Freeze for at least 6 hours, or overnight.
  6. Just before serving, pipe on whipped cream and garnish with dark chocolate-covered espresso beans.
  7. Cut into wedges and serve!

A fudgy bottom layer of brownie is topped with rich and silken cheesecake, then a layer of egg-less edible cookie dough is spread on the top and drizzled with melted chocolate.  This is the ULTIMATE cheesecake for the ULTIMATE dessert lover!  Brownie bottom cookie dough cheesecake deliciousness!

Remember a few weeks back when I shared these Vanilla Chai Cheesecake Bars and let you in on a little secret of mine? About how I had a fear of baking a full on cheesecake…. well, I challenged myself and did it! Well, not fully I guess, since this isn’t a classic cheesecake… but I think it’s even better.

I mean c’mon, it’s like three desserts in one! Rich and fudgy brownies, silky cheesecake and classicly sweet cookie dough. And of course I had to be extra decadent and drizzle a bit of melted chocolate over the top because… well, chocolate 😉

You’re already having a rich piece of cookie dough cheesecake, a little extra chocolate isn’t going to be a problem right? Go ahead, drizzle a little more on, it’ll be our little secret 😉

I made this brownie bottom cookie dough cheesecake for my husband’s birthday and let’s just say between us and the kids, we were fighting over who got the last piece!

This dessert may look fancy and complicated because of all the layers, but really it’s super easy.
Just mix up the brownie batter and bake it. While it’s baking, mix up the cheesecake batter. No need to cool the brownie first, just remove the pan from the oven, pour cheesecake batter over the top and return to the oven. Once the cheesecake is finished, it’s going to have to cool for a bit.

It needs to be firm before you add the cookie dough layer on top, otherwise it’ll mush and not look so pretty. You’ll need to chill the cheesecake for 4 hours or overnight, so plan ahead 🙂

The cookie dough layer on top is completely egg-less, so no salmonella worries here!  Honestly, I think it tastes JUST like regular cookie dough, so it makes a great treat to whip up and eat by the spoonful as well.  Stay tuned for another recipe using the egg-less cookie dough!

INGREDIENTS :

  • 1/3 cup milk chocolate chips
  • 1 tsp vegetable oil

BROWNIE LAYER:

  • 1 stick unsalted butter at room temperature (1/2 cup)
  • 3/4 cup semi-sweet chocolate chips
  • 1 cup granulated sugar
  • 2 eggs
  • 1/4 cup milk
  • 1 cup all-purpose flour

CHEESECAKE LAYER:

  • 18 oz cream cheese (2 – 8oz bricks and 1/4 of another 8oz brick), softened to room temperature
  • 3/4 cup granulated sugar
  • 3 eggs room temperature
  • 1 tsp vanilla extract
  • 1/2 cup sour cream or greek yogurt

COOKIE DOUGH LAYER:

  • 1 stick unsalted butter at room temperature (1/2 cup)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup sweetened condensed milk
  • 3/4 tsp vanilla extract
  • 1 cup flour
  • 1/2 tsp salt
  • 1 cup mini chocolate chips

INSTRUCTIONS :

BROWNIE LAYER:

  1. Preheat oven to 350 degrees F. Line bottom of a 9″ springform pan with parchment paper and spray paper and sides of pan with cooking spray (I use a baking spray, but you could use regular spray and lightly dust with flour instead).
  2. In a small saucepan, melt butter and chocolate until smooth, over low heat, stirring often.
  3. Turn off heat and whisk in sugar. Set aside to cool for 5-10 minutes, stirring often.
  4. To a mixing bowl, add in melted chocolate mixture, milk and eggs, whisking quickly so the residual heat doesn’t cook the eggs.
  5. Use a wooden spoon to stir in flour until just combined.
  6. Pour batter into prepared pan in an even layer, and bake for 25 minutes.

CHEESECAKE LAYER:

  1. Remove brownie pan from the oven and set aside.
  2. Reduce oven temperature to 325 degrees F.
  3. Using a stand mixer (or hand mixer), beat all cheesecake ingredients together until mixture is smooth.
  4. Take care not to mix too quickly, or air bubbles will form.
  5. Pour cheesecake batter over brownie layer in pan.
  6. Bake for 50 minutes, until center is slightly jiggly (or when an instant read thermometer inserted into the center reads 150.
  7. Remove from oven and cool at room temperature, with the pan on a wire rack for 30 minutes to 1 hour.
  8. Place pan in the refrigerator for 4 hours, or overnight to chill and firm up to that amazing cheesecake consistency.

COOKIE DOUGH LAYER:

  1. In a stand mixer (or hand mixer), cream together butter and both sugars on MED-HIGH speed until light and fluffy.
  2. Beat in sweetened condensed milk and vanilla extract.
  3. Beat in salt and flour. Stir in mini chocolate chips.
  4. Use an offset spatula to gently spread cookie dough over the top of the cooled cheesecake.
  5. This is done most easily when the spring has been undone and the cheesecake is free from the sides of the pan.
  6. If you can’t spread the cookie dough, gently press pieces together to “spackle” the cookie dough onto the cheesecake.

This Chocolate Chip Cookie Ice Cream Cake is a fun marriage of cookie and ice cream and is the perfect treat for summer!

Speaking of summer, we enjoyed our first weekend out on the boat last weekend. The hubs had technically been out the weekend before without me, but we’ll just pretend it was his first too.

We spent Saturday evening out and brought Jessie. She loved being out there as the sun was going down – less hot. 🙂 Then we went out with some friends for a bit on Sunday.

As usual, I got my first bit of sunburn. Not too bad, but a bit. I did use sunscreen, but that stuff comes right off in the water and right now the water is still so refreshing we had to swim. Not too cold, but cool. I’m sure in just a few weeks it’ll get warm. Gotta enjoy it while we can!

So this cake was actually born out of a love for chocolate chip cookie ice cream sandwiches. You know – the ones you can buy in the freezer at like, the gas station. Sounds glorious, right? But I always loved those as a kid so I decided it’d be fun to make a giant one!

Sadly this doesn’t look like a sandwich. Well, it did the first time around. Problem was, the cookie gets pretty frozen. Cutting through one cookie on the bottom and eating it is fine. But two? Two makes an ice cream cake that goes everywhere when you try to cut it. Sad, but true.

So I remade it with one cookie layer and the ice cream. Much easier to eat and totally delicious! You’ll still probably not want to use a plastic fork. 🙂

  • 1 1/4 cups semi-sweet chocolate chips
  • 1.5 quarts Cookie Dough Ice Cream
  • 4 oz Cool Whip
  • Mini Chips Ahoy
  • Chocolate Sauce (I used this one)

Instructions 1. To make the cookie, preheat oven to 350 degrees. Line the the bottom of a 9 inch springform pan with parchment paper. 2. Cream butter and sugars together until light and fluffy, about 3-4 minutes. 3. Mix in egg and vanilla extract. 4. Add flour and baking soda and mix until completely combined. Dough will be thick. 5. Once upon a time I made a Chocolate Chip Cookie Dough Brownies recipe.  I loved them, I shared them on my blog, and readers either loved them or not.  Here is a short video showing you how to make them:

There were a few “observations” made about my version of this totally-awesome-brownie-recipe that were sinking into my soul… which caused me to lose sleep at night (not really, but I added that for dramatic effect…)  I LOVE MY FIRST VERSION THE WAY IT IS… but I decided to listen those observations to see if I could create an even better Chocolate Chip Cookie Dough Brownies Recipe and make everyone happy!  Here it is!

Okay, first “observation”:  The cookie dough is “grainy.”  Well, I’ve got news for y’all.  Cookie dough is grainy. That’s just the way it is.  In this version, I melted the butter and then whisked in the sugars to see if I could make it less grainy and more dissolved… it might be a little better, but it’s still grainy.  If you’re a cookie dough lover then you know what I mean and you don’t care.  Cookie dough is just (by nature) grainy!  Someone had suggested trying powdered sugar to avoid the whole grainy-thing.  I wasn’t into that.  Real chocolate chip cookie dough must have both white granulated sugar and brown sugar or it doesn’t taste like chocolate chip cookie dough.  So there.

Second observation:  The cookie dough layer isn’t thick enough.  In this version, the brownies are baked in a 9×9- inch pan.  The brownie layer and the cookie dough layer are just about even.  That should satisfy just about everyone, right?

  • 3/4 cup (1 1/2 sticks) unsalted butter
  • 1 1/2 cups bittersweet chocolate chips
  • 1 cup granulated white sugar
  • 1/2 cup packed light brown sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup all-purpose flour

COOKIE DOUGH:

  • 3/4 cup (1 1/2 sticks) unsalted butter, room temperature or almost melted
  • 3/4 cup granulated white sugar
  • 3/4 cup packed light brown sugar
  • 1/4 teaspoon salt
  • 2 tablespoons milk or cream
  • 1 1/2 teaspoons vanilla extract or vanilla bean paste
  • 1 cup all-purpose flour
  • 1 cup miniature chocolate chips
  • additional miniature chocolate chips, if desired (to garnish the top)

INSTRUCTIONS:

PREPARE THE BROWNIE LAYER

  1. Preheat the oven to 350 degrees F. Spray a 9×9-inch pan with nonstick spray, then line with a strip of parchment paper so that it covers the bottom and comes up two sides of the pan. Spray the parchment with nonstick spray too.
  2. In a microwave safe bowl (or in the top of a double boiler or pan set on top of a pan of simmering water), microwave in 30 second bursts to melt butter and chocolate chips together until all is melted and smooth. Whisk in the sugars, then whisk in the eggs, vanilla and salt. Sift flour into the bowl and stir that in too. Scrape the brownie batter into the prepared pan.
  3. Bake for 25 to 30 minutes, or until the brownie layer is cooked through (toothpick inserted into the center comes out clean). Place the pan of brownies in the refrigerator to speed up the cooling process (or cool at room temperature and add the cookie dough layer later).

  • ½ cup Sugar

  • 1 tsp Vanilla

  • 24 Hershey Kisses (unwrapped)

INSTRUCTIONS

  1. Preheat oven to 350.

Ahhh, just looking at these makes me want to make them again! These peanut butter brownie truffles are the perfect combination of chocolate and peanut butter. They are very simple to make and are so worth the calories. I also think they go perfectly with any occasion. The peanut butter drizzle gives it that yellowy orange look that mixes perfectly with the rich brownie color on the inside. My family literally ate these all in about 10 mins. I had to hide one (maybe more) so I could eat them later hehe. I will for sure be making these again.

INGREDIENTS

  • 1 Box Betty Crocker fudge brownies
  • 2 Cups semi sweet chocolate chips
  • 1/2 Cup creamy peanut butter
  • 1/8 Cup peanut butter for drizzle

INSTRUCTIONS

  1. Prepare brownies as directed on box. Allow to cool.
  2. Mash up the brownies so they look like crumbly. With a cookie scoop, scoop up brownies and roll in hands until it forms an even ball.
  3. Place on a cookie sheet lined with parchment paper. Continue this until all brownies are in balls.
  4. Freeze for about 1-2 hours.
  5. Take out brownies and melt your chocolate chips and your peanut butter together.

We’ve got an easy homemade brownie batter studded with globs of peanut butter cookie dough for a chocolate peanut butter lovers dream come true.

These little squares did NOT last long my friends. My husband barely even got to taste them because the boys and I scarfed them up so fast. He’s learning that he has to be quick if he wants to get in on the good stuff.

Otherwise it’s like, “Um, didn’t I see a pan of brownies on the counter a few days ago?” Sure did buddy, you snooze you loose around here!

Ingredients:

FOR THE BROWNIES

  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all purpose flour
  • 1/3 cup cocoa powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

FOR THE COOKIE

  • 1/4 cup vegetable oil
  • 1/2 cup sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1/4 cup creamy peanut butter
  • 1 cup flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Directions:

  1. Preheat oven to 350 degrees.
  2. Prepare a 9 by 9 inch baking pan by lining it with parchment paper, leaving excess hanging over the sides for easy removal later.

BROWNIE BATTER

  1. In a small pan over medium heat, melt butter and stir in sugar.
  2. Remove from heat and stir in eggs and vanilla extract. Set aside.
  3. In a medium bowl, mix flour, cocoa powder, salt and baking powder. Stir the butter, sugar and eggs into the dry ingredients until just mixed. A few lumps are okay.
  4. Pour the brownie batter into the pan and set aside.
