This recipe for homemade Twix Bars is a game changer! When you take a bite, you won’t believe that this candy bar copycat is gluten-free, refined sugar free, Paleo, and vegan. Happy Fri-YAY!!! It’s the weekend, and you deserve some celebratory chocolate for making it through the week. And today, we’re celebrating with HEALTHY(er) homemade Twix Bars.

Whaaaat? Healthy Twix? I know. Yes, this is for real. I made homemade Twix bars that you can eat guilt-free, because these pretty little bars are gluten-free, grain-free, refined sugar-free, AND vegan. A whole big pile of them, because you deserve nothing less. I had to make this recipe three times, because you know, testing and stuff. I also needed an excuse to eat more.more.more of these delicious goodies.

Now, let’s talk about how this homemade candy magic happens. The crust is made with coconut flour, which creates a cookie base that creates a texture most similar to shortbread of any gluten-free flour I’ve tried.

Unfortunately, because coconut flour is super absorbent and likes to be unique, no other flour would substitute well here. A little goes a long way with coconut flour though, so pick up a bag and you’ll have it around for a while (and you can make lots of Twix!).

The caramel filling is seriously super easy. It can be made in the microwave or on the stove, but you don’t even need to cook it; all of the ingredients just need to be melted together and fully combined before being poured over the cooled crust and left to set. While the caramel cools, coconut oil, cocoa powder, and maple syrup come together for the quickest homemade chocolate ever. Pour the chocolate over the caramel and leave it to set and we’re almost done!

I opted to sprinkle a bit of fleur de sel over the top before the chocolate set, too. I’m a believer that a sprinkle of flaky sea salt makes pretty much anything better and I loved the bite of crunchy salt on these homemade Twix bars. It’s the perfect complement to the sweet filling, but you can leave it off for a more classic flavor.

I seriously couldn’t get over these homemade Twix bars and I immediately regretted sending them all off to work with my roommate and not saving any for myself! I think another batch may be in order soon 😃

INGREDIENTS :

For the shortbread crust :

  • ⅔ cup coconut flour
  • ¼ teaspoon kosher salt
  • 3 tablespoons pure maple syrup
  • ⅓ cup coconut oil, solid

For the caramel filling :

  • ½ cup creamy almond butter
  • ⅓ cup pure maple syrup
  • ⅓ cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • ¼ teaspoon kosher salt

For the chocolate topping :

  • ¼ cup coconut oil, melted
  • ¼ cup cocoa powder
  • 2 tablespoons maple syrup
  • ½ teaspoon flaky sea salt

INSTRUCTIONS :

  1. Preheat the oven to 350ºF. Grease a 14×5” tart pan or 8×8” square pan with coconut oil (I recommend lining the pan with parchment paper as well if your pan doesn’t have a removable bottom).
  2. Combine coconut flour and salt in a bowl.
  3. Add the maple syrup and stir until fully combined and crumbly.
  4. Add the room temperature coconut oil and mix until a large dough ball forms, pressing out any clumps of coconut oil.
  5. I used my hands at the end to bring the dough fully together.
  6. Press the dough into the prepared pan. Bake for 9-11 minutes, or until golden brown around the edges.
  7. Let cool completely.
  8. For the filling, combine all of the ingredients in a small saucepan and heat until all of the ingredients are melted and throughly combined.
  9. Pour over the crust and let cool in the refrigerator until set before topping with chocolate layer.
  10. For the chocolate topping, whisk together all of the ingredients and pour over the cooled caramel layer.
  11. Smooth evenly and sprinkle with flaky sea salt.
  12. Let cool until set.
  13. Slice into 1-inch slices, or 16 squares.
  14. Keep stored in the refrigerator.

These super simple Apple Pie Fries make for a super fun spin on a traditional apple pie. Store bought pie crust cut into strips, filled with a simple store bought apple pie filling, then baked for crispiness. You can dip them in caramel sauce or even whipped cream for additional yumminess.

I shared out Caramel Apple Pie Cookies with you last week. They were so simple and my whole family really thought they were quite tasty. This weekend, I decided to use the other store bought pie crusts and store bought pie filling I had on hand to surprise the kiddos with these super fun Apple Pie Fries.

These cute little snacks are so easy to make and perfect for dipping. You can make Homemade Pie Crust and Homemade Apple Pie Filling.  I was looking to make a quick and easy dessert so I used store bought ingredients so I could make these in a jiffy.

INGREDIENTS :

  • 1 package Refrigerated Pie Crust (2 crusts)
  • 10 oz Apple Pie Filling
  • 1 Egg
  • 1 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 1/4 cup Sugar
  • Sparkling Sugar
  • Caramel Topping for dipping

INSTRUCTIONS :

  1. Preheat the oven to 350.
  2. Spray cookie sheet with non stick spray or use silicone mat and set aside.
  3. Allow crusts to warm slightly to make them easier to work with.
  4. Dust work area with flour and slightly roll out crusts.
  5. Pulse in food processor a couple of time or use a knife to chop pie filling into smaller pieces.
  6. Spread apples over top of 1 crust leaving about 1/8″ uncovered at edges.
  7. Place other crust on top.
  8. Cut into 1/2″ strips and then cut to fry sized lengths.
  9. Beat egg in bowl until well blended.
  10. Mix together sugar, cinnamon and nutmeg.
  11. Brush tops with egg wash and sprinkle lightly with sugar mixture.

Seriously, for the first 30+ years of my life I would not eat anything with shredded coconut. And then I had a samoa cookie. And my life changed. How could I have missed out on so many years of samoa cookie eating?

INGREDIENTS :

  • 1½ cups semi-sweet chocolate chips
  • ½ cup butter, softened
  • 1 (16-ounce) package light brown sugar
  • 3 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 (8-ounce) container sour cream
  • 1 teaspoon vanilla extract
  • 1 cup hot water

Caramel Frosting :

  • ¾ cup butter (1½ sticks)
  • ¼ cup jarred caramel sauce
  • 3 cups powdered sugar
  • 1½ to 2 tablespoons heavy cream or milk

Toppings :

  • 1½ cups sweetened shredded coconut, toasted
  • Caramel Sauce
  • Hot Fudge Sauce

INSTRUCTIONS :

  1. Preheat oven to 350 degrees and grease and flour and bundt pan (or usebaking spray).
  2. Melt chocolate chips in a microwave-safe bowl (heat at 20 second intervals) until smooth when stirred. Set Aside.
  3. Beat butter and brown sugar with an electric mixer until blended well, about 5 minutes.
  4. Beat in eggs one at a time.
  5. Beat in melted chocolate just until blended.
  6. Sift together flour, baking soda, and salt.
  7. Add flour mixture to batter, alternating with sour cream, beating at LOW speed just until blended after each addition.
  8. Slowly, with mixer on LOW speed, add hot water.
  9. Stir in vanilla.
  10. Pour batter into prepared Bundt pan.
  11. Bake at 350 degrees for 55 to 60 minutes or until a wooden pick inserted in the center comes out clean.
  12. Let cool 10 minutes in pan then remove cake from pan to cool completely

Caramel Apple Slices are a delicious twist on a fall classic that are easier to eat & enjoy at parties or just for fun!

It’s caramel apple season again!! Woohoo!!!

While I love caramel apples, I must admit I always have to eat them with a knife on hand because I can never seem to be able to just take bites out of them. Super frustrating…

And while Mini Caramel Apples are really cute (& I even revisited my Mini Caramel Apples recipe in a new post with new tips & tricks), I just don’t have the time or patience to deal with gravity & those little weeping apple balls of caramel mess. And I know you don’t either!

But I still desire to eat my caramel apples with ease & enjoyment.

I was inspired by a picture of a sprinkle & chocolate covered apple slice, but when I clicked through it showed a candy apple recipe & the above described picture was no where to be found. I didn’t even bother looking at the recipe, I was pretty upset by the deception.

So I decided to fix the situation by doing some caramel apple testing & I was determined to come up with a solution with a little trial & error.

The chocolate hardened within a few minutes, but the butterscotch took about 10-15 minutes to harden. I decided to let them sit for an extra hour because I wanted to see if they would weep through & cause the coating to fall off, before I proceeded with the caramel. Plus I needed to run to the store to buy peanuts, sprinkles, & a few other things.

When I got home I noticed a few tiny drops of apple tears from the chocolate dipped apple slices, no big deal. But the butterscotch covered apple slices seemed to be weeping quite a bit more.

I wiped up all the liquid, set to the side the apple slices that were too weepy & falling apart, & proceeded to the caramel step. And that’s when I realized my original plan was not going to work. The first one was my fault, I poured hot caramel on top of my chocolate apple… Majorly bad idea! Seriously, what was I thinking??

So then I popped my apple slices in the freezer for 5 minutes & I let my caramel cool & thicken. I then tried again with the same results. And you can see in the picture above what I did next. It might not look pretty, but it was delicious!

INGREDIENTS :

  • Apples
  • White or Wooden Lollipop Sticks
  • Melting Chocolate
  • Caramel
  • Topping-otional

INSTRUCTIONS :

  1. First wash & slice your apples, remove the seeds, insert the stick at the bottom, & pat the apple slices dry.
  2. Cover each apple slice in melted chocolate & place on a piece of wax paper to dry.
  3. Continue this process until all of your apples are covered in chocolate & have hardened.
  4. Then drizzle the caramel & other toppings on top of your apple slices.
  5. Let harden & enjoy!
  • Notes :

1. You could alternatively use butterscotch on your thicker slices of apples, but you should be aware that butterscotch does not harden as well as the chocolate & could result in weeping apples & the butterscotch falling off.
2. These Sliced Caramel Apples can be made the day before & left in your fridge on wax paper until you need them the next day. Just don’t forget to note the 5 tips mentioned in my recipe post.

  • More Tips :

1. Cut thick apple slices so the stick stays secure. Approximately 1/2 – 3/4 inch thick works great.
2. Make sure to pat down the apples to soak up any extra apple juice.
3. Allow some of the chocolate to drip onto the stick, this will act as a sort of edible glue that holds the stick & apple together.
4. Use slightly cooled caramel so the chocolate doesn’t melt off.
5. I also recommend that you make them & eat them in the same day. The longer they sit the greater chance for a weeping caramel apple slice, which will cause the yummy coating to break or slide off in some areas.

Soft Batch Chocolate Fudge Cookies with a gooey pocket of salted caramel inside! Pure decadence.
We’re heading to Paris on Wednesday! The trip was originally just for a quick two-day conference, but after much debate, we’ve decided to stretch it out and stay for a week.

I’ve never been to the city of light before, so I’m beyond excited to eat, explore, and eat some more. Coffee, chocolate, croissants, and cozy sweaters! I cannot wait.

The recipe I used to make them is almost the same as my famous soft batch double chocolate fudge cookies. These cookies are made with simple ingredients like flour, cocoa powder, butter, chocolate, baking powder, salt, sugar, milk, and vanilla. ← Proof basic ingredients,when combined properly, can create epic recipes!

I recommend using a softer salted caramel that will melt nicely and keep a plush texture even after the cookies have completely cooled. You’ll want to roll the soft caramel into a small ball and pop them in the freezer for 10 minutes. This helps ensure no caramel escapes the cookies during the baking process.

When it comes to baking these cookies, you’ll preheat your oven to 325 degrees (F), but once you pop the cookies in the oven, you’re going to immediately crank that dial down to 300 degrees (F). The low, longer baking time gives these cookies their crackly shell and gooey fudge interior. ♥♥♥

FYI: These cookies must – I repeat MUST – cool completely on the tray. I usually leave the room for a good 45 minutes before I even think about sneaking one (or 3…) off the tray.

  • 2 cups semi-sweet chocolate chips
  • 4 tablespoons unsalted butter
  • 2 and 1/2 cups all-purpose flour
  • 6 tablespoons unsweetened cocoa powder
  • 2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup granulated sugar
  • 3/4 cup light brown sugar, packed
  • 4 large eggs, at room temperature
  • 4 tablespoons whole milk
  • 2 teaspoons vanilla extract
  • 2 cups milk chocolate chips
  • 2 teaspoons flaky sea salt

INSTRUCTIONS :

  1. Unwrap the caramels, roll each one into a ball, and place them on a freezer-safe plate.
  2. Place the plate in the freezer for 10 minutes. In the meantime, prep your cookie dough.
  3. Preheat oven to 325 degrees (F). Line two large baking sheets with parchment paper, lightly spray them with non-stick spray, and set aside.
  4. Place the semi-sweet chocolate chips and butter in a small, microwave safe bowl.
  5. Heat them in the microwave for for 15 second increments of time, mixing in between each, until butter and chocolate are completely melted and can easily be whisked smooth. Set aside. *You may also do this process on the stove top if you don’t own a microwave.
  6. In a medium-sized bowl whisk together the flour, cocoa powder, baking powder, and salt. Set aside.
  7. In a separate medium-sized bowl whisk together the sugars, eggs, milk, and vanilla.
  8. Add the dry ingredients into the wet ingredients, and stir to combine – be sure not to over mix here!

A friend of mine mentioned one but it didn’t happen…so now I’m thinking I need to organize something. Because watching football is way more fun when the husbands watch it in the family room and the wives gossip over wine in the kitchen.

And did I mention football food? I feel like I’ve been training all my life for football party eating. Chips, nachos, dip, cookies and bars: I’ve emptied out one of my legs especially for the occasion.

Before you get baking for next weekends games (because I know you all tailgate, right?) you need to print this recipe. These ooey gooey Chocolate Chip Caramel Butter Bars are the dessert that your next party will be talking about for days.

This recipe is a brainchild of so many other recipes. I started thinking about all my favorite gooey bars, especially the chocolate chip ones. But then I thought I’ve been there, done that…so I decided to make my favorite sugar cookie recipe and add chocolate chips. But, still, I wanted to fallifize (remember that word I made up?) the recipe…so I decided to use caramel in the center, like I did with my Caramel Peanut Butter Cookie Bars.

All in all I ruminated about this recipe for DAYS before I finally made it. Seriously, I went back and forth akin to my husband picking his fantasy team for the week.

INGREDIENTS:

  • 1 1/2 cups unsalted Challenge butter
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 2 tablespoons vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1 teaspoon salt
  • 4 cups + 1/4 cup all purpose flour, divided
  • 2 cups chocolate chips
  • 1 (11-12 ounce) jar caramel or salted caramel ice cream topping

DIRECTIONS:

  1. Preheat oven to 350°F. Line a 9×13” pan with foil and spray with nonstick cooking spray.
  2. Cream butter and sugar with a stand mixer fitted with the paddle attachment (or you may use a hand mixer). Once the mixture is creamed and fluffy, mix in the eggs and vanilla extract until smooth, then mix in the baking soda, cream of tartar, and salt. Slowly mix in 4 cups flour until the mixture is just combined, then stir in the chocolate chips.
  3. Press about 2/3 of this mixture in the bottom and about 1/2” up the sides of the prepared pan.
  4. Stir the caramel sauce and remaining 1/4 cup flour in a small bowl. Pour over the top of the dough. Drop spoonfuls of the remaining dough evenly over the top of the caramel.

Ingredients

For the chocolate cake:

  • 2 cups granulated sugar
  • 1 cup light brown sugar, packed
  • 2 and 3/4 cups all-purpose flour (not packed!)
  • 1 and 1/2 cups unsweetened cocoa powder, sifted
  • 3 teaspoons baking soda
  • 1 and 1/2 teaspoons baking powder
  • 1 and 1/4 teaspoons salt
  • 3 large eggs + 2 large egg yolks, at room temperature
  • 1 and 1/2 cups full-fat sour cream
  • 1/3 cup whole milk
  • 3/4 cup vegetable oil (you may also sub in melted coconut oil)
  • 2 tablespoons vanilla extract
  • 1 and 1/2 cups hot water

For the salted caramel chocolate frosting:

  • 2 cups unsalted butter (4 sticks, 16 ounces), VERY soft
  • 4 and 1/2 cups confectioners’ sugar, sifted
  • 3/4 cup unsweetened cocoa powder, sifted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 3 tablespoons heavy cream (more if needed)
  • 2 tablespoons salted caramel sauce

Garnish:

  • 1 and 1/4 cups salted caramel sauce (please see post for more on this)
  • Flaky sea salt

Instructions

For the chocolate cake:

  1. Preheat oven to 350°(F). Cut out three 9-inch round segments of parchment paper to line your cake pans with. Spray each pan generously – sides and bottom – with nonstick cooking spray, then place the parchment paper cut out in the bottom of the pans and spray again. It’s important to make sure every bit of pan and paper are sprayed so your cakes don’t get stuck. Set pans aside.
